I want to try and get a chimera baby or two at some point this year, but don't know how to do it? Anyone have any tips?

Use chimera mares. That's who I get most of mine from. I've gotten a few from chimera studs, but it's mostly the mares. You may have an even better chance using both.

I get a bunch of mares and at least 1 stud I got one this year but she was spayed

There is also a bigger chance if you use the breeding lab to create the foal :)

Any pair of horses has potential to produce a chimera foal but you have a slightly higher chance of getting one with chimera parents.

I think it was something like a1 in 100 chance for a chimera stud to produce a chimera foal and 1 in 50 for a chimera mare to produce a chimera foal.

I breed only chimera/brindle foundations and that estimation seems fairly close with what I have experienced in my pastures.

To follow up on BlackWyld's comment, Ammit dramatically increased the chances of breeding lined chimera foals earlier this year. I'm not sure how the new system works, but I think chimera mares are still more likely than chimera stallions to produce chimera foals. The chances of a chimera foal also go up when you do lab breedings with straws or embryos. Since you are a basic upgrade, what I would do is I would collect yourself a small army of chimera rank special mares and stallions and breed them in the lab using straws.

I have a pasture on the Bluegrass server that has a chimeric stallion and 24 chimeric mares. They have been in that pasture long enough that their oldest get are now 13 years old. In April I decided to see how many of their offspring are chimeras. There are 6 of them, out of a total of 308 foals. I didn't check to see if any of the dam's had produced more than one of the 6. I'm waiting to see what happens this year on the 14th.

I personally keep a pasture of ~30 chimera mares with one chimera stud and I tend to get 1-2 chimera foals per season. It doesn't always work but just to back up what others have been suggesting!
