There isn’t going to be singular answer to this, which is why so many of us love this game. I'll share what I do, and then other will explain what they do that works fro them. :)

For show horses I keep horses in the PT ranges of 10.0-11.0 and then 12.5+. I pretty much always speld (spay/geld) show horses. Some of the higher 14-15PT horse I have double as breeders and showers.

My breeding horses are almost always double boosted or single boosted. I pretty much like to breed for real life true to breed standards on my lines/breeds except my Stygien breed (liver chestnut cobs that are so dark the look black Mu/Mu Sty/Sty DP/DP e/e f/f p/p).

I don't typically GMT horses unless I'm working on building a line and need to breed in or out genes. Otherwise I use GMTs for maxing and making a horse perfectly consistent that I plan to double boost.

I do sometimes use GMTs to change mare to stallions or stallions to mares. Sometimes I also mess with the amount of white a horse has because a prefer shorter leg markings for the most part (unless its one of my pinto lines).

Basically you can use them however makes you happy. I would guess most people would use them in slightly different manners, because we don't all like the same genes.
