I know this maybe stupid to ask, but how do you geld horses? ^^;

If a horse has passed Breeding Advice (BA) you can always go into their Control Panel to spay or geld them. Click on a horse, the tabs at the top read from "Horse Info" to "Tack", but you want "Control Panel". Once clicked you can scroll down. There should be a list of green buttons, like "Edit Notes", "Geld/Spay", "No Testing". Click the Geld/Spay and confirm.
Gelding or Spaying a horse can be undone, but only by the person who has bred the horse and you must use GMTs to do it, which can get expensive.Producer of Volcanic Glass Drafts. Lapisobsidianus.

Additionally, if you have a number of horses in the same barn that you wish to neuter, you can select them all using the boxes near the extreme right of each entry on the barn list. Then click the Geld/Spay button near the bottom of the page.
The game asks you to confirm that this is what you really want to do several times before actually taking action, so if you have any hesitation that you may have selected one of them accidentally, you have the chance to correct possible errors.
I fairly frequently deliberately make show horses this way by creating a bunch of fillies or colts, selecting them all after testing and then neutering them before moving them to a different barn. I also remove any with abysmally low PT scores to a barn for horses to be auctioned first.De gustibus non disputandum. "There's no arguing about tastes."
