1) horse color names are based on phenotype (how they look to the eye) rather than genotype (what their actual genetics are) both in real life and in the game (this is why there is that whole real life debate about sorrel vs chestnut).

2) hom cream overrides all the visual characteristics of champagne—coat color, eye color, skin color—so champagne drops out of the color name.
