Breeding Woes

I've been breeding foundation cob x foundation cob and have been getting drafts. I used to get cobs. Why is this?

Horses can throw a certain range of heights in the game. This range does go above their own height, so if you breed two 14hh cobs together, you could get a foal that'll go above 14.2hh, which'll make it a draft.
This also applies to bone weight as well, so two riding horses could give birth to a warmblood if their bone i high enough.Producer of Volcanic Glass Drafts. Lapisobsidianus.

I thought height was random. I've bred 16.0 hh horses together and gotten anywhere from 16.2 to 17.0. Then I've bred 16.0 and gotten 14.2. I'm not sure how to get a handle on that, but I don't really breed for a certain height.
